The grapes, exclusively from Alvarinho, are harvested by hand in small boxes, capacity and transported to the winery in a short time. After pressing, the must obtained is decanted for 48 hours, followed by fermentation, the temperature controlled using yeast pre-selected for this purpose. The bottling takes place after the stabilization of wine, being followed by a stage in the bottle. Vinification Alvarinho Sunny is targeted for a wine that focus on quality of grapes and allow a good development after bottling.
